Unfortunately, you can only associate one process per record type. I'm wondering how you would assign each process to users if there was more than one per record type, since you can assign record types to profiles and perm sets, not the processes themselves.
If you really don't want to use separate RTs, you could add the type of sale in the stage value (ie -Negotiaaion X, Negotiation Y, etc) and use validation rules, but then, you would need something in the rule to say users in the X group can only use values with X in it, etc. You could use custom permissions I guess, but these are just workarounds and I think it would make it a lot harder to administer in the long run. Better stick with the standard functionality.
