We are trying to do some "progressive profiling" when collecting lead info from our website and are asking six questions, each answer leads to the next, appropriate question. We do not want to lead with the standard name, title, email address but are having trouble finding a way to create a Pardot form that does not have the email field on it and required. The goal is to store every answer along the journey, even if the lead does not get to the final question asking for their email address.
Is this possible?

Any Pardot form or form handler MUST have the email address field. The email is how Pardot identifies a prospect, and it is required to create a prospect record. You can do the progressive profiling to ask subsequent questions, but as you've found, the email address field has to show up first.
