What happens to old data when picklist options are changed?

If I currently have a custom picklist field with 10 values and remove 5 of the values, what happens to records containing the values that have been removed?  Do they old values stay on the record, or will they old values have to be changed to match one of the current values?

    Hi Eric,

     

    Data will always present in Old record, if you deleted some option from picklist, But if you try to create new record that time you can see only option present in picklist not deleted one...
