Sure is! Conceptually you will be creating a time based Workflow rule. Your rule criteria is pretty straightforward, you want it to queue up anytime an Opportunity is created and as long as it's in any Open status. Your rule syntax could be as simple as
!ISCLOSED
Then for your actions would be set to execute based on the close date. So for example you may want one email to go out 1 day after the close date is expired, then another follow up 5 days after that. Maybe you even want to auto roll the opportunity to Closed Lost after 7 days! That one always goes over well with sales people, especially if they can't reopen closed Opportunities. :)
