Hello, I'm getting mad. :-)
The due date on tasks is mandatory in all page layouts and for all users.
One, just one user, can create a new task from the New Task button on tasks list views in home page without due date.
All other users cannot do the same.
Where in your opinion I should investigate?

Investigation you can do :
1. Check all layouts and issue with user profile assigned layout specifically
2. check that you have the button is not the custom action or button if so update it accordingly
