I don't believe you can hide standard fields with FLS, what would be an example? Email and Title on User object for example

You can hide standard fields using FLS, and you should do so, for the fields you are not using, since you can't delete them, but we don't want to clutter up the page layout for our users. A good example is on the account object, where we have fields like D-U-N-S Number, SIC Code, SIC Description which many companies are not using. We'll use FLS to hide them, so our users don't seem them (not on the page layout but also not in list views or reports, etc).
