How do we move log a call to lightening experience? I've noticed when I try to log a call within Lightening it creates a task and doesn't log a call

To Chris' point - you would add the new Activity component to the Lightning page (in your case, the Contact page) and that would be reflected on all your Contacts of that record type. If you're still having trouble, double check that the "Log A Call" action is on your Page Layout under the Lightning Experience Actions section.
