Sender email ID

How do I send custom email IDs as Sender email for Pardot mailers?

Currently options are assigned user, account owner, specific user, general user.  We want to send email ID frmo a specific field on an object in Salesforce CRM.  If its blank then to send from "assigned user". How do we achieve this?
