I've been using matching rules and duplicate rules, but then came across the topic of duplicate jobs and duplicate record sets. I'm unsure if these are interchangeable terms or different topics all together?

You're on the right path.
A duplicate rule is a single record and displays in real time. It's what is responsible for the "We found X number of potential duplicates for this record" when you view a record.
A duplicate job searches across the entire org for duplicates based off your matching rule. This is to be considered a batch job and would list all dupes for that matching rule.
