I am trying to use Data Loader to import Notes from another CRM system. How do I override the Created Date when importing? I have the date column in my csv but when I try to map the fields, it does not show up.

You have to be granted the 'set Audit Fields' permission. If you are the Admin, here is a link that explains it.
