I would like to know if it is possible to take the table created in the quote process and transfer that table into a custom created contract template. Basically can I create a contract template or mail merge that pulls from customer fields and a Quote?

    You can create Visual Force email templates that use Apex controllers to retrieve the records you want.  Depending on your needs, you might find that an application like Conga Composer (available from the AppExchange) suits your needs instead of hand-coding.
