I see that you can choose between "Account Default" and a private IP on a delivery profile - would "Account Default" still be the shared pool of IPs if we purchase a dedicated IP?

If you purchase and set up a single dedicated IP address, "Account Default" is (confusingly) your prviate IP address. Support should be able to answer if they can set the shared pool as the "Account Default" with your private IP as an optional selection. That is, however, not the default behavior that they set up.
