How to pull an email displayed in a Formula(text) field into an email field?

I have a custom field that is a Formula(text) field. It pulls the Opportunity Owners email into the Formula text field on a custom object "Contract Review" from the field displaying the connected Opportunity.

 

 Opportunity Owner - Opportunity_Owner__c - Formula (Text)

    Did you try to setup a workflow or process builder field update to pull the email displayed in a Formula(text) field into an email field?
