My workplace has the Professional edition, and my boss asked me to research the following.
Is it possible with our edition of Salesforce to create an email notification, so that when active opportunities don't have activity recorded against them in say, 30 days, the opportunity owner will get an email advising this. Could this email also be CC'd to my boss?
Following this, if no activity is then made against the account after the warning, a second notifiation is to be sent to the owner (and the boss) warning this after 2 months of inactivity?
This will be handy for monitoring the Salesforce users to ensure they are regularly updating their opportunities and following up outstanding information.

In PE you don't have access to Workflows or Process Builder (unless you buy thgem as add-on's) so your best "out of the box" option would probably be Scheduled Reports =>
