Thats for all the help, Matt's response is the nearest to what I need 'If the field needs to remain editable, i.e. a user can go change the picklist after the initial value is set, you will probably want to use a Workflow Rule that fires when Stage EQUALS {Stage Name}, and then create a workflow action that updates your picklist field to the correct value'. However we have Professional Edition which unless I have missed something does not include workflow rules.
