Forecasting

I'm new to Salesforce, and am trying to figure out the best way to forecast revenue. Generally we have a customer who may give us an open PO for a number of products over a six-month period, that may change throughout the time period.. Instead of creating 6-separate Opportunitities, what are my other options?

Are there any Apps that would provide a better solution?
