If we enable Email Relay, will we be able to send Salesforce emails from our own mail server using a shared organization-wide address (i.e. support@example.com)? We are looking for a solution that does not just mask the sender to appear like "support@example.com"when it is actually from Salesforce, which is how our emails from Salesforce currently appear.

This question (https://developer.salesforce.com/forums/?id=906F0000000BSEHIA4) seemed closest to what I'm looking for, but the answer doesn't make clear if organization-wide address can be used or what the from-address looks like to the customer.

Yes, that is exactly what Email Relay is for. After it is enabled, any email sent from Salesforce, whether sent manually by a user, or automatically via a workflow rule email alert, auto response rule, etc,  will be routed through your mail server.

We have this enabled in our org. Before email relay was enabled, emails used to be received and show up something like "From support@example.com via xyz_123@salesforce.com" as you described. After enabling it, it just says "From support@example.com".
