Generally, the relationship should be a Master Detail Relationship to Rollup fields from Child to Parent Object.
The relationship between a Product and Opportunity Product is a lookup relationship.
Please install the free Declarative Rollup Summary Tool which does the rollup of fields from Child to Parent Object even for a Lookup Relationship.
