What happens when the auto-turn on date hits, and we don't have my domain enabled at that time? Also, what are the consideration for enabling my domain?

There shouldn't be any impact if you do not have My Domain enabled. It's a good/helpful feature to set up before or during your Lightning transition but not a pre-requisite for Lightning Experience in general - only certain things like custom components.
