Would I need to consider existing Chatter feed settings before I create a Fast Flow? Would want to update a few thousand records that created a few thousand chatter posts.

In Spring 19 we no longer have to worry about 'Create' or 'Fast Create'. It's all one element now in Flow. Other than enabling Chatter, you would not have to worry about Chatter settings.
