While Salesforce support for ADFS 2.0 is well documented, what is the level of support ( or lack of) for ADFS 3.0 and ADFS 4.0 ? Any gotchas to be aware of.

Properly characterized, we don't support ADFS in any fashion. We support SAML which is a protocol that both ADFS and Salesforce speak. So, we'll support connecting to any SAML IDP and the salesforce configuration and validation associated with that.
Which brings me to answering your question - we don't know of any issues with using ADFS regardless of version. We worked out compatibility between the two systems years ago and lots of customers use both 2 and 3 successfully. I haven't heard of 4 being used, but I'd be surprised if there are issues.
