I have data sources that I am processing using Tableau data prep creating flows. I want to be able to automate flagging fields as dimensions (integer IDs for example) without having to do this every time we select that datasource for a new workbook.

@Alex John, Tableau published data sources DO remember the data type you set for each field. Please post a counter-example if you have one.
