I am new to Salesforce. I am trying to "Create a list view, change the status of multiple opportunity records, and view opportunity status in Kanban" in my own hands-on org. I launched playground and went to the setup, but cannot figure out where the opportunities tab is. Thanks!

Welcome to Salesforce.
The Opportunities Tab is typically visible on your Home Page. (Here between Home and Leads)
Once you click it, you can create New List Views on the right hand side using the wrench icon. The icon right next to the wrench (which looks like a data table picture) gives you the option to change between Table/Kanban and Split view.
