Einstein Activity Capture Event syncing issues

I have Outlook Integration setup and it appears to work as expected.   I am taking the next logical step and trying out the Einstein Activity Capture.

I have enabled EAC and created a configuration and I do not sync private events and i sync events both ways.  I also have my user connected to our MS Exchange.   The first sync from Outlook to SF occurs and works partially.   Here are my questions and cannot find explanations for them.

• The sync is only happening from outlook to SF not from SF to Outlook, why?  I did check to make sure my SF email matches my outlook email address. 
• EAC creates a new calendar in SF called 'Microsoft Exchange' where the sync'd events from outlook appear.  They are not included in the calendar 'My Events'.   I understood they should be listed in the SF calendar 'My Events'.
• The sync only occurs the first time I connect SF and my Exchange account.  Any subsequent changes I make to Outlook calendar events, they do not sync to SF, why?   I have waited hours - well past the 15 minutes.
• Even though I am not syncing Outlook private events, the Outlook private events still are sync'd to SF, why?

My SF user account does have the permission set 'Standard Einstein Activity Capture'.

I have been searching and reading various SF Help articles and other posts and cannot get good explanations.

Any assistance or links I should review is greatly appreciated.   Right now Outlook Integration is good and stable, but I am not at all confident with EAC.
