I've been told that when an email is created, and before it's sent, the last email sent date time field is updated. So while an email is in draft it updates this field. Obviously, that is not what we want. How can I update my flow to fix this? The status 3= sent. So it should be only updating when it's sent already?

Try this:
-Change the trigger to 'A Record is updated'
-Run the flow when the Email Message is edited to meet the criteria.
