I work in a non-profit social service agency using SF for client records and for development. How would my SF admin training differ for that specialty? Who are some trailblazers in this field?

There is a specific certifcation: Nonprofit Cloud Consultant.

Work through the trails and recommended reading to prepare for that exam and you'll learn all you need.
Nonprofit exam covers a lot of material. It is unlikely your organisation will need you to know all the information, so feel free to skip sections if they aren't relevant to the org. but if you're set on getting the cert then obviously don't skip them.
