I need to customize a 'flat gauge' chart. I am trying to show meeting outcomes like 'Non productive, 'Non immediate opportunity' etc in RED color. I could not do so from formatting option.

Colors in flat gauges are always related to the measures displayed. Maybe the flat gauge is not the proper chart type to display what you want.
You can use compare table to create the required columns, bar charts, small multiples and conditional format to achieve something similar.
