In the past, our company would do updates, like R13, R14, etc. We currently work with salfesforc.fdc with sales and events management. Did they go away from doing large updates like this, and do the individual ones listed in the releases?

Salesforce.com do 3 releases a year. IF you know your salesfroce instance number you can find your release schdule on status.salesforce.com ,for example here is the release scdhule for instance NA87:
https://status.salesforce.com/instances/NA87/maintenances
other salesfroce products have different schechudles so if your query is about SFMC, SFCC etc, the answer would be different
