Currently we have a POC (proof-of-concept) object inside an Opportunity record, but that gives us little flexibility into reporting, data entry, automation, templates, etc.
Is there an app or a module - or a specific structure - something that would be more adequate for managing and tracking POCs? How is that usually seen in your Sales orgs?

There are many ways:
1- Scratch orgs can be used which are disposable orgs
2- Sandboxes can be used from a main instance
3- Developer edition can be used for certain products demonstration
