I'd like the contract field on an opportunity record to be populated once a contract has been created. I've tried to do this in the process builder but it isn't working

Oh that is why it is not working. When you are triggering something from the contract record being created it has no way to know which opportunity to update.
So you either need to move the first process to flow. Or create an opportunity field to populate on the contract so Salesforce knows which opportunity to update with the contract information.
