In process builder, how can you create an action where the field values will be customisable to the end user?

I am looking to create an automation using the process builder. I work for a company which manufacters and sells park homes (lodges). What i would like to do is create an automation where the user HAS TO log new home details (price, home type, dimensions etc) as soon as they make the sale & update the opportunity stage to 'closed won', however i need the feild values to be customisable to the end user as these values will be different from sale to sale?

    How many variations would there be? Are we talking different based on area, type of home (mobile, brick, apartment, historical), or is it a complete mess of whatever the sales person feels like?
