What is my best way of accessing the last time/if these objects are being used?
I have tried the Custom Object Usage by User Licence report but it is huge and only has a field called 'Metrics Date' - which I can only assume is the last login date? I can't find much detailed info on using this report effectively. The Help & Training article guides you through setting it up, but not using it.
Could I use Field Trip in some way, I wonder?
Any help/advice appreciated.

The Field Trip give you results about percent of data stored in fields and unused fields.
You can give a Try using LastModifiedBy in The Report by the user
