I would like to remove the pages and get my environment onto Lightning.
How do I remove/turn off the VF pages?
Can you point me in the direction as to how to do this?

Edward - Before even deleting you would need to see what areas the VF pages is referencing ex: tabs, visual force tabs can be used in mobile as well etc. I would suggest to do this process in a test environment first.
If you have a developer in your company he/she should be able to help you with this process.
