Today an employee resigned effectve immediately and I need to know the best way to do two things please.
1) Am I able to check their export history, like if they've exported any contact details for customers etc?
2) Another employee is effectively going to manage the resigned employee's SF login so they can keep tabs on unfinished tasks etc. What is the recommended way I do this? Can I transfer all open tasks/events to the new user?

@Danielle : You can use Event Monitoring to track the exports. See this for more info: http://releasenotes.docs.salesforce.com/en-us/winter15/release-notes/rn_forcecom_security_elf.htm#.topic-title .
Coming to transfer all open tasks/events to the new user , from Salesforce UI i don't think you can do it in a bulk . Although you can go and edit the individual tasks and reassign them . Yes, I know it's a tedious process . Or else you can also do this via Workbench (https://workbench.developerforce.com/login.php) .
