Our process starts with a lead, then a contact, then an opportunity. In some cases, this original opportunity will need to be replaced by a partner opportunity.
Is it possible to link the original opportunity to the new one in order to not lose visibility?

You can, but you'll want to be careful about double counting the Amounts. If you add a Lookup(Opportunity) to the Opportunity object, maybe called "Original Inhouse Opp", when this scenario arises, you can edit the Partner Opp and select the 'original Opp' in this field. You'll want to CloseLose the original to avoid double counting.
