Global picklist value sets

So I just learned about "Global Picklist Value Sets".  I have the same multi-picklists in four different objects and three different related lists.  So when a product update happens, I have to update seven different areas.  I sure would like to change these seven different areas to source the Global Picklist, but how do I make the change and preserve the data in those fields?

    When I select “Edit”, the “Promote to Global Value Set” is greyed-out. Why would that occur?
