Under the Projects tab, in the Activity History section, we have the fields: Action, Subject, Name, Task, Due Date, Assigned To and, Last Modified Date/Time. How can we add a field to the Activity History section Under the Projects tab, either Contacts-Account Name, Accounts-Account Name or, Leads-Company?

The way the Activities object is defined, you can't get those fields.   Normally, you would create a formula field, but Activities are related to other objects differently so you can't do that.
