Then I could sort my activity by date and see both notes and calls in the same section by order of date.

You may not br able to do it on the record but you can go to the Task Tab change the view in the list view to Table View by clicking the Ganban like button and filter an existing list view or create a new one and all activity types will get there and you can filter by Related To (Related Object- Account, Opportunity etc)and Name(Related Lead or Contact) and sort that.If a field you want is not on the list view you can add to the Search Layout on the Activity Object and then select fields to display and sort the fields
