Search and instant results and enhanced search

My staff are going crazy because the main search is inconsistent with the secondary field.  Sometimes it works sometimes it is blank.  see the attached photos.  Also trying to implement Einstein search and it is denying me.  All documentation states we need Enterprise edition which we have.  Any idea why these things happen?
