Question - Is the Field Type: Text (Encrypted) supported by Shield encryption tool or is that a separate tool?

You can use Text (encryption) independent from Shield encryption. Text (encryption) is a data type - shield encryption allows you to encryption allows you to encrypt other fields (not just the Text (encryption) data type fields).
