Is it possible to have reports default with specific fields (e.g. Account Name, Quantity, Sales Price - shown in that order)

@Joe Ugalde When you create / update a Custom Report Type, you can control which fields are automatically included in your report by clicking "Edit Layout", select one or more fields and click "Edit Properties". If you click "Checked by Default" next to one or more fields, they will automatically be added to newly created reports of that type.
