I seem to have read that in Lightning reports, I could create folders and subfolders to organize reports and dashboards. I can't find this information. Is there anyone who can help me ? Thank you.

Yes, the ability to create, rename, and share report folders is a Winter '18 feature: http://releasenotes.docs.salesforce.com/en-us/winter18/release-notes/rn_rd_reports_and_dashboards_folders.htm .
It is not currently possible to create report sub-folders, however.
