With the latest update, has the feature to select which users have Lightning enabled been removed? I'm the admin and can no longer find this section. This help article also seems to be outdated since I couldn't find the "Lightning Experience" section anymore. The only option to switch a user between Lightning and Classic is for the user to do this themselves on their account, which I used to also be able to do as the admin.

@Amrutha Simon, with Summer '17, it's not possible to use the Switch Users tool to switch LEX-enabled users back to Salesforce Classic -- as noted at the end of this release note: https://releasenotes.docs.salesforce.com/en-us/summer17/release-notes/rn_general_lex_switch_user_wizard.htm .
But yes, users can switch themselves back.
