I'm planning a yearly upgrade from 2025.1 to the January 2026 release, and this is my first time handling this process.
Is it recommended to upgrade incrementally (2025.1 → 2025.2, etc.), or is it safe to jump directly to the latest version?

do you mean from 2025.1 to 2025.3 ? Then there is nothing is between. That's the only jump you can do for major release. Version 2025.2 being for Tableau Cloud only.
Tableau Server has a 3 major version every two years release cycle while Tableau Cloud has 6.
If you are new to this, do a lot of reading. The upgrade documentation is fine:

If you can, I would recommend a blue-green deployment approach where you provision another server in advance, similar to prod, so you can validate quietly and rollback if needed:
