Sharing rules and Profile

Hello All 

We are struggling with sharing rules at the moment.

Is there a way if I can create a sharing rule with read/Write access based on a particular stage to the owner of that application?

Basically I don't want to give edit access on profile level so that owner should not be able to edit any information on his application record when application is not in a particular stage.
