@George Mullins - I've had several customers in this same situation, the Classic was the best fit at the time. They are now discussing a migration to the lightning platform, and several have done so. With innovation there is often technical debt. Note: Salesforce has pledged to support the Classic Platform for a minimum of 5 years from final release. The B2B Commerce Lightning Platform is available to you for no extra cost - when you purchase B2B Commerce, you have the choice of either platform.
There are many benefits toward shifting to Lightning such as: Standard Objects for Commerce (no longer custom) which allows for OOTB integration with Sales/Service and Experience cloud, Faster time to launch (which means faster time to market) and innovations 3x a year with the new releases now that B2B Commerce is on the Salesforce Platform.
