How do other universities and colleges who use Salesforce purge/destroy application data

Our university is reaching out to see if and how other universities and colleges are purging/destroying data specifically from applications that feed information into Salesforce. For example, Education History (transcripts), Letters of Recommendation, CVs, Statements of Purpose, etc. Any tips or recommendations for best practices?

    At ASU we are in the process of launching a custom archive process using a Heroku architecture. It is not specific to application data but objects leveraged by recruitment such as campaigns that are driven by application data. This archive process will be used to archive data based on university data retention policies and business rules. The process can be used to address archive of data in any object as needed.
