For free tutorials, check out Tableau Tim and sqlbelle on Youtube. For a modest cost, Udemy has some good courses (e.g., Kirill Eremenko and Maven Analytics/Dustin Cabral).
For community projects, you could start with Back 2 Viz Basics — The Tableau Student Guide.
