The "Stored Procedures" option in Tableau Desktop (SAP Connection HANA) is missing, would you know if it would have any specific configuration?

Stored procedures are not supported on SAP HANA per - Stored Procedures
You could vote for the idea here - null if this is a feature you would like to see developed.
