I have a database connection to a table, let's say contracts.

I want to connect to another table that has claims (with no connection to contracts). Should I add a new data source and select the table? Or click on "add data"? What is the difference?

Also, strangely, when I clicked add data it created a new connection but the original table was in the new connection. When I removed it, it was also removed from the original connection.

This is the difference between adding a new data source, vs. creating a cross database join.  If you "add connection" from within the datasource window - you are telling tableau to add a new data table from a new source and join it with the current datasource (cross database join).  I think what Alex intends to do here is to add a new data source, which is done via the Data -> New Data Source Menu item.

I think you want the second one shown here.
